A Different Kind of Post... A Recipe?!

A rather different kind of post, but appropriate for a blogger spending a Sunday with her family...

Mediterranean Chopped Salad

1 cucumber, peeled and sliced
1 red bell pepper, diced
3 stalks celery, diced
1 C cherry tomatoes, quartered
2 T chopped red onion
2 T finely chopped parsley
1 T lemon juice
6 black olives, quartered
2 oz. crumbled feta cheese
2 T olive oil

Mix all ingredients in a non-metalic bowl.

Note: I have used green bell pepper, regular tomatoes (and lots of them) and extra olives, and it's still de-lish. It's one of our summertime favorites since summer tomatoes are wonderfully juicy and flavorful.

Sounds tasty :) And as an added bonus, most people who are lactose intolerant such as myself can usually eat feta cheese without problem.

Try the 100% Lactaid milk, if you haven't already. We can drink that with impunity.

Can you cook with that milk? I don't care that much for milk but its neccessary for some soups, white sauce, gravy, etc.
